The Path
Apprenticeship set the base line for the work at Hotel Dagmar in Ribe, Denmark, where Jens Peter Kolbeck learned the discipline and routine that underpin professional kitchen craft. From there, French restaurants became the proving ground: L'Auberge, Mougins, Troisgros, Bocuse, and La Pyramide in France (1970–1974), each adding pressure, repetition, and precision to the same technical vocabulary. Those years fixed French cuisine as the reference point in his cooking and, by his own account, remained with him. Later, service as chef to Queen Margrethe / Gastronomic Principal Officer responsible for all the royal kitchens at Danish royal family in Denmark placed him inside one of the country’s most closely watched kitchen systems. Since 1988, Christie's Restaurant has been the long-running base for Jens Peter Kolbeck as co-founder and managing principal partner, where experience and continuity are part of the operating method.

Jens's signature dishes include Turbot in puff pastry and calf’s foot braised in Geuze beer. Together they show two ends of the same craft language: a clean, composed treatment of fish and pastry on one hand, and a slower braise that draws depth from the beer on the other. The first leans on structure and contrast; the second on time, collagen, and the layered character that comes from traditional cooking.

I have worked there for 4 years and although I traveled to other countries afterwards, France has always been in my heart.” French cuisine is the fixed point in that statement: the style that shaped his standards, stayed after the travel, and continued to frame the rest of the work. “For the first time, I took part in Bocuse d’Or in 1987, when it was initiated. I was awarded the fifth position.” Bocuse d’Or in 1987 brought his work into a competition defined by speed, precision, and public scrutiny.
