i. Biography
Jérôme Roy is the chef and co-owner of the Michelin one-starred restaurant L'Opidom in Fondettes, near Tours, France, which he opened with his wife Valérie in 2019. Previously, he earned a Michelin star in 2016 at Le Cloître restaurant in the Couvent des Minimes in Mane-en-Provence, along with the Trophée Grand de Demain Gault et Millau that year. His career includes training under Thierry Marx at Cordeillan-Bages, over six years at Maison Troisgros in Roanne, and four years as executive chef for Pierre Gagnaire in locations including Paris, Courchevel, London, Seoul, and Saint-Tropez.
