Cocktail work is built on sequencing: ingredient choice, dilution, temperature, service, and the discipline to make the drink repeatable. In Joaquín Simó’s practice, that discipline runs through bar operations, editorial work, ownership, and consulting rather than sitting in a single station. “Better. A better friend, a better boss, a better manager, a better leader, a better husband, a better dog-daddy and obviously a far better answerer of questions.” Joaquín has said.
The Path
Hospitality training often starts before the tin: door work, barbacking, guest flow, and the mechanics of a room. After Boston University, Joaquín Simó worked as doorman and barback at White Horse Tavern in Boston, building the operational base that later carried into bartending at Death & Company, New York. The move from floor support to cocktail service placed technique inside a higher-volume, standards-driven bar environment. Cocktail literacy also passes through editing and documentation. As Deputy Editor for Food & Wine Cocktail Books from 2009 to 2010, Joaquín Simó worked in the space where recipes, method, naming, and instruction have to hold up on the page. That editorial discipline sat alongside bar practice, then continued into ownership when he became a partner at Pouring Ribbons, New York, in 2012, remaining there until 2022. Consulting requires translating house style into systems another team can run. As partner and mixologist at Alchemy Consulting, Joaquín Simó applies bar experience, recipe development, and operational judgment to cocktail programs beyond a single counter.
