i. Biography
Today, ownership and kitchen leadership sit together at Black Shoe Hospitality, where Joe Muench brings a career built on consistency, craft, and the discipline of working service after service. The signature Oxtail Soup has become a practical marker of that approach: rooted, direct, and shaped by the kind of steady hand that reads well in a busy kitchen. The style behind it stays collaborative, with rhythm and teamwork taking precedence over display. That same ethic carries into community work, where Muench has said, “There was an opportunity through the church I was attending at the time to go out into the community and do mission work.”
The Path
Professional training at the MATC Culinary Arts program gave Joe Muench the structure that many kitchens demand before the line does. From there, the pace tightened in Milwaukee, Wisconsin, where he worked as Sous Chef at Grenadier's, a post that would have required speed, precision, and the ability to learn while the tickets kept moving. Executive roles then broadened the scope of that work. At Eddie Martini's, Muench served as Executive Chef, a position that asked for consistency and command. He later held the same title at Big Foot Country Club in Lake Geneva, Wisconsin, then moved into a Corporate Chef role at DeRosa Corporation, where the work expanded beyond a single kitchen. He continued as Executive Chef at Sticks & Stones in Brookfield, Wisconsin, and then at Maxie's, building a record defined by adaptability, responsibility, and the demands of high-volume hospitality.
The Work Today
At Black Shoe Hospitality, the work is marked by a balance of discipline and ease, the kind that comes from long practice rather than theater. Oxtail Soup remains Joe Muench’s signature dish, and it fits the broader line of his cooking: depth, patience, and a preference for steadiness over flash. The room reads collaborative, not performative. The kitchen appears to run on timing, restraint, and a shared pace, with Muench favoring the long view over the loudest gesture.
Signature
Joe's signature dishes include Pork Schnitzel and Oxtail Soup. Together, they show two sides of the same kitchen discipline: one crisp and immediate, the other deeper and more slowly assembled. Each carries the kind of familiarity that tends to endure beyond trend.
In Their Words “There was an opportunity through the church I was attending at the time to go out into the community and do mission work.”
Acclaim
For more than twenty years, Joe Muench has remained a steady presence in Southeast Wisconsin kitchens. The measure of that run is less about novelty than durability: a chef whose work has held to purpose, collaboration, and a clear sense of how to keep a kitchen moving.
