i. Biography
Jon Ayala is the chef and grill master at Laia Erretegia in Hondarribia, Gipuzkoa, where he runs the kitchen and is described as an expert in meat maturation and dry-aged beef. He won the National Grill Contest at San Sebastian Gastronomika in 2015.
