Alto and Totto Il giorno gave Jorge Espinoza the base; Monkey Bar in New York City and Tapika in New York City, where he worked as butcher and line cook from 2000, tested that base under service conditions. The move to the first scarpetta location at Scarpetta in New York City in 2008 marked the point where accumulated technique became responsibility.
