The Path
Bar service is built from repetition, timing, and a working read of the room, and Joseph Brooke’s early years show that progression clearly. He started as a cater-waiter in New York City, then moved into Starfoods in New York City from 2004, working as a busser, food runner, expo, server, barback, and bartender. Formal training came later at AKA Wine Geek’s BAR program (2010), which gave structure to experience already shaped by shift work and service pressure. Before and after that point, Brooke’s practice was cumulative rather than abstract. New York City gave him the mechanics; Los Angeles expanded the range. He worked at Bar Marmont in Los Angeles, The Edison in Los Angeles, Copa d’Oro in Los Angeles, and Next Door Lounge in Los Angeles, rooms that required him to adjust to different rhythms while keeping the same core discipline: read the crowd, keep service moving, stay clean in execution. That background led to bar manager and head bartender at Mixology 101 in Original Farmers Market, Los Angeles, where operational knowledge and floor experience met in a more senior role.
