Portrait of Josh Davis
i. Biography
Career Josh Davis started at Camp Runamok, then moved into Chicago nightlife, where the work shifted from entrance control to service discipline. First as a door guy and bouncer at Chicago nightclubs in Chicago, then as a nightclub bartender at Chicago nightclubs in Chicago, he built a practical read on crowd pace, shift energy, and the timing that keeps a room moving. At Players Club in Chicago, that same instinct carried into the bar program, where the work stayed close to movement, hospitality, and response. Today, Josh is founder of Brown and Balanced and bartender / bar director of The Bureau Bar. In both roles, the bar is not treated as a fixed stage but as a working system: drinks, room, and service all shaped with intent. Founder marks the point where the concept comes from his own hand; bartender / bar director marks the daily labor of making that concept function service after service. - founder, Brown and Balanced, Chicago - bartender / bar director, The Bureau Bar, Chicago - door guy and bouncer, Chicago nightclubs, Chicago - nightclub bartender, Chicago nightclubs, Chicago - bartender, Players Club, Chicago Education: Camp Runamok
Signature
Brown and Balanced is Josh's signature cocktail work. Brown and Balanced is a cocktail cookout executed by people of colour. The concept places the cocktails inside a social framework rather than a standalone menu idea: gathering, heat, and shared table energy sit alongside the bar. For Davis, that makes the work legible as both expression and service, with identity and occasion built into the format itself. His own words point to a direct ingredient-first method: “I fell in love with creating with fresh ingredients and different spirits, and that has been the name of the game for me since.” Freshness, contrast, and immediacy are the terms that matter here. The work is about what can be built in the moment from what is on hand, and about using spirits with enough clarity that the drink reads cleanly.
Acclaim
Brown and Balanced is Davis’s signature work, tying cocktails to a cocktail cookout executed by people of colour. That recognition fixes the center of his practice: a concept with identity at its core, and cocktails used as a medium for gathering and expression. It is the work that carries its own definition, and Josh Davis’s name remains attached to it because the idea is the way he uses it.
In Their Words “I fell in love with creating with fresh ingredients and different spirits, and that has been the name of the game for me since.” “I started bartending 13 years ago.” Those two lines set the frame plainly. One names the method: fresh ingredients, different spirits, and the act of building from them. The other places that method in time, enough years to absorb pace, repetition, and the mechanics of service without losing the urge to make something new.
