i. Biography
Joshua Pinsky is the chef and co-owner of Claud, a downtown bistro in New York City's East Village, which he opened in 2022 with partner Chase Sinzer, and Penny, a raw bar and seafood counter upstairs debuted in 2024. A graduate of the Culinary Institute of America, he began his career in San Francisco restaurants including Lafitte, moved to New York in 2012 to join Momofuku Ko where he rose to chef de cuisine and later corporate chef, before leaving in early 2020 to launch his own ventures. Both Claud and Penny have earned three-star reviews from The New York Times, inclusion in the Michelin Guide, and spots on Esquire's Best New Restaurants and Wine Enthusiast Forward 50.
