Rum blending at Appleton Estate is technical work: sensory memory, chemistry, inventory judgement, and consistency across mature stocks. Joy Spence holds the title of Master Blender there, and her appointment made her the first woman ever appointed Master Blender in the world. Training and Lineage
Chemistry is the working base for Spence’s blending practice. Joy Spence studied at the University of the West Indies in 1972 and further developed that training at Loughborough University. Classroom teaching came first, as a Chemistry Teacher, before industry work as a research and Development Chemist at Tia Maria. The distillery brought that scientific background into rum production in 1981, when Spence became Chief Chemist, a role she held until 1997. Since 1997, her work at the Nassau Valley house has combined master blending, brand representation, and technical and Quality Service, tying sensory evaluation to the production standards of Jamaican rum.
