i. Biography
Koichiro Oshino is a Japanese sushi chef associated with Singapore’s Shinji by Kanesaka and the later-opening Oshino at Raffles Hotel. Michelin coverage described him in 2020 as the master chef of Shinji in Carlton Hotel, and subsequent reporting said he later opened Oshino and earned its first Michelin star in 2021. In 2025, reporting said he left Oshino after its lease expired and had relocated to Taipei for a new restaurant venture.
