The Climb
Training at the Culinary Institute of America gave the work its base, and Michel Bourdin at the Connaught Hotel in London, England supplied the next layer of discipline. That combination—formal schooling followed by service in a demanding hotel kitchen—shows up in the way Forgione’s career was built: through structure, pace, and standards that shape a cook long before the public sees the result. Returning to the United States, he took the chef role at An American Place in New York City, the position that anchored the next phase of his practice. At a moment when many chefs were still looking abroad for authority, Forgione put American cuisine at the center of his own work. That choice gave the career its direction. In the kitchen, it meant cooking with an argument attached. Outside it, it meant stating plainly that American food had its own heritage and its own place on the table. The move from the Connaught Hotel to New York was not just a change of address; it was the point where training under Michel Bourdin gave way to a public case for national cuisine, made through the food itself. An American Place Cookbook extended that argument into print. As a book, it carried the same function as the restaurant: a working record of ideas, a fixed text for a style of cooking, and a way to present American cuisine with more reach than a dining room alone allows.
Today
The chef role at An American Place in New York City defines the center of Forgione’s career. In that post, the methods gathered from the Culinary Institute of America and the Connaught Hotel could be read in the daily rhythm of service, where precision and point of view had to hold together. That work placed Forgione among the first chefs to present American food as something to champion on its own terms. The combination of kitchen leadership and authorship gave the career its shape: service in one hand, argument in the other, and a written record in An American Place Cookbook.
