The Path
Training at SUNY Purchase gave Laura DePasquale the base, but the work was built in rooms with different demands: beverage direction at Royalton Hotel in New York, bar management at Arizona 206 in New York, dining room management at A Mano in South Beach, Florida (1992–1993), and service at Mark's Place in North Miami, Florida. That spread reads less like a ladder than a working map of floor service, beverage oversight, and front-of-house coordination. Since 1999, Norman's in Coral Gables has been the fixed point in Laura DePasquale's career. As sommelier and Beverage Director, she has held a title that ties wine service and beverage program oversight to one house over time.
