Lauren Chattman’s work in pastry was built on formal study, not a restaurant upbringing. With a Ph.D. in English and two years teaching at Yale University, she brought academic discipline to the pastry and baking program she entered in New York City, where the methodical side of the craft became the center of her next profession.
