Flavour development starts with measurement, repetition, and the ability to read small changes before they become defects. In an early flavour development role at Pharmaceutical company until 1988, Lesley Gracie worked inside that discipline: taste, aroma, balance, and structure treated as practical variables rather than abstractions. Liquid development for whiskies and malts asks for a different kind of patience: character built through controlled decisions and sensory judgment. In 1988, Gracie moved into a new liquid development role focused originally on whiskies and malts at William Grant & Sons in Scotland, bringing a flavour developer’s precision into spirits work. Contemporary gin development depends on how far a distiller can extend botanical structure without losing coherence. From 1999, Gracie became the developer / conceiver of Hendrick's Gin at William Grant & Sons / Hendrick's Gin in Girvan distillery, Scotland. Today, Lesley is Master Distiller of Hendrick's Gin, continuing that work through controlled experiment, sensory recall, and close reading of ingredients.
Where They Are Now
Gin innovation at Hendrick’s is organised around botanicals, greenhouses, and an innovation laboratory at the site on the west coast of Scotland. In Gracie’s work, leaves, flowers, and fragrant materials are treated as working materials: tested for behaviour, adjusted through trials, and held back until the liquid has a reason to exist. “The Hendrick’s Gin Palace is my playground, filled with all my favorite things.” In a distiller’s register, play means permission to test unlikely aromatic links, not permission to be careless. The method still requires selection, rejection, and repeatability before an idea is allowed into spirit form. Botanical distilling here is less a fixed recipe than an active tasting practice. In Gracie’s hands, botanicals are assessed for how they sit beside one another, what tension they create, and whether the final structure remains legible in the glass. Curiosity matters, but only when it is disciplined enough to produce a coherent liquid.
Signature
Hendrick’s Gin, Hendrick’s Sunspell, and Hendrick’s Amazonia sit within a gin practice built on aromatic development rather than category routine. In Lesley’s work, the signature is the search for unexpected flavour paths that still hold their shape: botanicals chosen for what they contribute to structure, atmosphere, and finish, not for novelty alone.
