The Path
Service is the first school in Levi Dalton’s profile. He began as a waiter, reading the room from the guest side before moving into wine as sommelier at The Federalist in Boston, where floor service and cellar language started to overlap. From there, he worked for Daniel Boulud at his Palm Beach outpost at Daniel Boulud restaurant group in Palm Beach, Florida, a shift into a room defined by polish, precision, and the expectations attached to that name. Beverage direction at Masa Takayama's namesake sushi restaurant in New York asked for a wider frame. The usual assumptions around pairing did not hold in the same way there, and Levi Dalton had to work with a more fluid logic, one shaped by the pace of the meal itself. He later served as wine director at Convivio and Alto in New York, roles he held until 2011.
