After returning from Australia during the financial crisis, Lily Jones turned sweets into a pastry and cake practice. What might have stayed a private interest became the basis of work built on structure, finish, and a light hand with indulgence. Sugar, texture, and celebration sit at the center of Jones’s output, with desserts shaped to read as carefully as they taste.

Early on, consultancy work helped define the range of Lily Jones’s practice. At Bloomsbury's Boutique Café & Artisan Bakery in Kochi, India (2014–2015), she worked as consultant helping launch Bloomsbury's Boutique Café & Artisan Bakery, a role that placed pastry inside the wider service of hospitality rather than apart from it.
