A Venezuelan-born cook, Luis Maldonado moved to Ecuador in 2017 and set his work around a plain directive: “We focus on showing the local product.” That principle gives the cooking its shape. Rather than masking ingredients with flourish, he builds plates that let product speak for itself, with technique serving as structure instead of cover.
