Cocktail work in Luke Whearty’s practice is built around venue context, local reference, and a willingness to test the format without losing the bar as a place for service. The through-line runs from Melbourne to Singapore and back to Melbourne, with each room marking a different stage in how contemporary drinks can carry locality, seasonality, and guest engagement. “Bartending for me has always been nothing more than a creative outlet. Training and Lineage
The early trade formation came through a Head Bartender role at Der Raum, where Luke Whearty worked within a Melbourne bar culture that valued technical precision and new-drink development. That position gave the craft a working base: reading a room, building a list, and treating cocktail structure as something that could be adjusted without becoming detached from service. The Singapore chapter began in 2013 with the co-founding of Operation Dagger. Within that venue, Whearty’s work was attached to an experimental bar format and a drinks program known for moving beyond familiar cocktail presentation. Operation Dagger became associated with avant-garde cocktail experiences, not as novelty for its own sake, but as a way of testing how ingredients, atmosphere, and expectation could be handled inside a working bar. The return to Melbourne took shape in 2020 with Byrdi, co-founded by Luke Whearty. The venue continued the same concern with environment and drink identity, now grounded in a Melbourne setting and a contemporary service model.
