Marcelo Hisaki has spent more than a decade building Restaurante Amores as a kitchen where technique, memory, and place are worked into the same line. Since 2013, he has been chef-owner of the restaurant in Tecate, Baja California, Mexico, and the cooking there carries the pressure points of a mixed training ground: Mexico City birth, Japanese parentage, French schooling at Lycée Hotelier de Monte Carlo, and a practice formed at the junction of Mexican, Japanese, and French cultures. At Amores, those influences read less like separate references than a single working grammar, carried through local produce and a kitchen that values control, detail, and feeling in equal measure. His own introduction is plainspoken, and it maps the span of the role: The line places him in more than one circuit at once, moving from Tecate into broader professional exchange without leaving regional identity behind.
The Climb
Formal training at Lycée Hotelier de Monte Carlo gave Marcelo Hisaki a French-cuisine base built on precision, restraint, and repeatable technique.
