The Path
Hospitality ownership here follows an operator’s route rather than a kitchen apprenticeship. Mark Domitrovich trained at The University of Kansas before moving into entrepreneurship as founder and owner at promotional products company. The later buildout is organized through Pioneer Tavern Group, where he is founder and ceo, with ownership of Lottie's Pub since 2002, Frontier since 2010, and Ina Mae Tavern & Packaged Goods since 2018.
The Work Today
Group leadership is the working craft: site ownership, continuity across properties, and the ability to hold a hospitality line over multiple openings. Domitrovich’s current work is centered on ownership and group leadership. The 2010 opening of Frontier in West Town widened the operating pattern. The structure matters: Domitrovich as owner, Chef Brian Jupiter leading the kitchen, and the venue functioning as another branch in the same hospitality family. The 2018 opening of Ina Mae Tavern & Packaged Goods continued that working relationship with Chef Brian Jupiter. Read as a sequence, the dates show the build: 2002 for the Bucktown property, 2010 for the West Town opening, 2018 for the next collaboration.
In Their Words “But Lottie was a trusted source on both sides of the coin.”
Acclaim
Lottie's Pub sets the long operating line from 2002 to the present. Frontier and Ina Mae Tavern & Packaged Goods mark the expansion of that line through openings made in partnership with Chef Brian Jupiter. The career is best read through the work of ownership: founding, holding, and extending a tavern group across distinct Chicago properties.
