Event work teaches hospitality as logistics before it teaches it as menu. In Mark Ryan’s account, the first lessons were practical: food being prepared, service in motion, and work happening out of sight. “I always enjoyed cooking food at a young age,” he says, but the craft context was broader than cooking alone. It included the systems around an event and the responsibilities that make service function. Back-of-house labor formed the early register of the work. Ryan remembers being with his father at work from the beginning, close to the business in ordinary, useful roles: “Growing up, I remember always being with my dad at work, whether I was helping in the warehouse or doing coat check.” Warehouse work and coat check sit far from the plate, but they belong to the same discipline: readiness, order, timing, and guest flow.
