A career in beverage is often built the hard way, service by service, and Martin Beally’s path shows that kind of accumulation. He started in Seattle in 2005, moving between line cook and front-of-house work while building the practical habits that come from being on both sides of a dining room. That early mix matters: it teaches timing, pacing, and how to read a room before a guest has to ask twice. By 2011, the work had narrowed toward wine. At Tulio Restaurant in Seattle, Martin Beally served as wine steward, and at Kimpton’s Tulio Ristorante in Seattle he worked as wine buyer. Those roles sit close to the list itself: one asks you to know how the room uses wine, the other asks you to decide what belongs there in the first place. In 2013, he helped open Stoneburner, adding opening work to a record already marked by steady advancement. His next steps moved from restaurant-level execution into broader beverage oversight. At Wild Ginger, Martin Beally served as Corporate Beverage Director, taking on responsibilities that extended beyond a single floor. In 2019, he became Lead Sommelier at Canlis in Seattle, a role that brought together service, curation, and leadership in one of the city’s most watched dining rooms. Each position added another layer to the same skill set: selection, communication, and the discipline to make beverage programs run cleanly. That experience later reached into the profession’s larger infrastructure. From 2026–2028, Martin Beally was a member of the CMS-A Board of directors at CMS-A, reflecting a career that had moved beyond day-to-day service into the systems and standards shaping the field. Today, Martin is director of wine, beverage, and Ops Integration of Cooper’s Hawk Winery & Restaurants.
