Formal hotel-school training at the Lycée hôtelier de La Rochelle gave Mauro Colagreco the base expected of a cook entering the French system: technique first, repetition, and the discipline of service. The school is the recorded starting point here, not a romantic origin story. French haute cuisine work was then built through houses with established standards. Le Relais Bernard Loiseau gave Mauro Colagreco a working frame until 2003, before Paris positions at the three-Michelin-starred l'Arpège, Hotel Plaza Athénée, and Le Grand Véfour added further exposure to classical technique, luxury-service tempo, and different kitchen structures. Restaurant ownership became the main craft vehicle in 2006, when Mauro Colagreco opened Mirazur in Menton, France. The later roles connected to Côte by Mauro Colagreco and Mauro Colagreco at Raffles London at The OWO extend that same name into other markets while keeping the reference point fixed on restaurant cooking rather than media persona. “By choosing what we eat, we choose the world we want to live in.” Mauro has said.
Present Day
Circular gastronomy is the working language attached to Mirazur, where Mauro Colagreco serves as owner and chef. In Menton, between Mediterranean coast and hillside agriculture, the restaurant is described through local, seasonal sourcing and sustainable culinary practice rather than through a single national idiom. The garden system at Mirazur functions as both supply and method. Produce grown for the restaurant informs the kitchen’s decisions, tying plates to the immediate land and sea around Menton and placing environmental practice inside daily production rather than outside it.

Recognition for the work at Mirazur came in clear stages.
