Portrait of Melissa Yanc
i. Biography
Early in Melissa Yanc’s career, she moved through two demanding posts with the control kitchens require: director of wholesale at Bien Cuit in New York and Pastry Chef at Gjusta in Los Angeles. Both roles asked for pace, discipline, and a sharp eye for detail, and they helped set the steady, layered approach that now marks her work. They also point to a career built on accumulation rather than display, skill stacked on judgment, with a feel for pastry that stays precise without losing its welcome. Today, Melissa is co-owner and Pastry Chef of Quail & Condor and co-owner of Troubadour Bread & Bistro, where that range shows up in a broader format. The move from wholesale to pastry, from New York to Los Angeles, and then into ownership reads as a gradual tightening of her voice while expanding her scope. The work carries technical polish, but also the plain warmth that comes from instincts shaped as much by memory as by professional training.
Where They Are Now
In her own words, Melissa says, “we’re a bakery and coffee bar, offering fresh, long-fermented sourdough and artisanal sandwiches.” The description is direct, but it lays out the tempo of the operation: fermentation measured over time, the daily rhythm of a bakery counter, and food that is built to be exact without being fussy. It describes a place where bread, coffee, and sandwiches sit inside a larger, steady working order.

Signature
Melissa Yanc’s Brownies are among Melissa’s signature dishes. The choice fits a Pastry Chef whose work runs on precision and memory: a familiar dessert, handled with her own point of view, and made specific through execution rather than reinvention.
In Their Words “My goal in life is to create more people who enjoy working in hospitality.” That line shows a chef thinking past the plate and into the room around it: the team, the pace, the conditions that make hospitality workable over time. It frames the work as something communal, where the quality of the experience depends on more than the food itself. “One of my first memories is decorating cakes with my grandmother.” The memory is simple and exact: hands on a cake, frosting in play, the kitchen becoming an early site of attention and care. It points to the thread running through Melissa’s work now, where craft and tenderness stay connected to one another.
