i. Biography
Michael Rubinstein is a Las Vegas-based chef who rose through the city’s restaurant scene after studying culinary arts at the College of Southern Nevada. He helped open Momofuku Las Vegas at The Cosmopolitan of Las Vegas in 2017, later became executive chef there, and went on to lead the reopening of Vetri Cucina in Las Vegas as chef de cuisine before later roles including executive chef at Sartiano’s Italian Steakhouse at Wynn Las Vegas.
