i. Biography
Co-founder and chairman of Wholesome Wave, Michel Nischan moved from restaurant kitchens into food leadership shaped by source, labor, and access. Milwaukee gave that work its grounding: farming, hunting, fishing, and the day-to-day handling of food all informed the discipline that later defined his cooking and advocacy.
The Climb
The early run of Michel Nischan’s career took form in 1982, when he became head chef at Fleur De Lis in Milwaukee, Wisconsin. That role set the terms: service under pressure, repetition, and the requirement to turn technique into something immediate on the plate. He later served as founder and partner at The Dressing Room Restaurant, extending his reach beyond one kitchen and into a broader restaurant identity. The center of gravity then shifted from the kitchen alone to the systems around food. Since 2007, Michel has been cofounder and chairman and founder and president of Wholesome Wave, and co-founder of James Beard Foundation Chefs Boot Camp for Policy & Change. The work stays connected to the same practical concerns that shape any serious cook’s day: ingredients, labor, and who gets access.
