Seasonal fruit gets the same attention. “Right now we're knee-deep in mango season and I cry a little bit every time I eat a mango here because they're so good,” she has said, marking the kind of peak-season response that shapes dessert around what is actually worth using. Accessibility sits at the center of her approach, but it is not treated as a compromise. “Out here, that's what people are eating every day. And people literally had never had sticky toffee pudding here before because it's not commonly found here.
