Portrait of Nicholas Yanes
i. Biography
Nicholas Yanes has been cooking at Juniper in Austin, Texas, since 2015. The work there reflects a chef shaped by movement through kitchens of increasing scope, with a style that reads as controlled rather than flashy. Trained at Western Culinary Institute, Yanes moved from line work into broader creative responsibility, including time as creative director and chef at Uchi and Uchiko in Austin before arriving at Juniper. His own read on the food is plain: “Italian cuisine is one of family, tradition and loyalty.”
The Path
Western Culinary Institute gave Nicholas Yanes the formal start, but the rest of the path is marked by responsibility accruing in stages. That sequence led to H50 Bistro & Bar at Hotel Fifty in Portland, OR (from 2011), where he served as Executive Chef and further defined the shape of his cooking. The Austin return came with a broader remit: creative director and chef at Uchi and Uchiko in Austin, TX (until 2015). That kind of appointment signals a step beyond line execution into authorship, with the work shifting toward menu direction and point of view. Since 2015, Nicholas has been chef of Juniper, where the accumulated range of those earlier roles can settle into a more legible style.
The Work Today
At Juniper, Yanes’s cooking is easiest to read through the named dishes. Brisket Bolognese is held up as a clear example of the restaurant’s Northern Italy-meets-central-Texas approach, a plate that carries familiar structure while making room for local context. It is direct in its references and practical in its intent. Cured and Grilled Pattypan Squash, paired with zucchini, tomato emulsion, dill mascarpone, pickled onions, lemon, and olive oil, shows the same discipline from another angle. The composition is built with a close eye to balance: vegetables, herbs, dairy, acid, and oil arranged so each element keeps its place. Taken together, the two dishes sketch the kitchen’s range without overstatement.

Acclaim
Recognition here is attached to the plates themselves. Brisket Bolognese carries the restaurant’s Italian reference point into central Texas ground, while the pattypan squash dish gives a more ingredient-specific view of the same approach through dill mascarpone and pickled onions. The result is a body of work that reads through named dishes first, rather than through broad claims about style.
