Nicolas Stamm-Corby is the chef of La Fourchette des Ducs in Obernai, Alsace, where he has worked with Serge Schaal since 1998. The restaurant was created in Obernai in 2000 after Stamm opened his first 16-seat restaurant, La Fourchette, in Haguenau at age 25. Michelin coverage identifies La Fourchette des Ducs as his restaurant and describes his cooking as a balance of classic French technique and inventive touches.
