Omar Barsacchi is the chef and owner of Osteria Magona in Bolgheri, Tuscany, which he opened in 2004 in the historic center before relocating to the countryside of Vallone dei Messi for a farm-to-table focus. He partners with butcher Dario Cecchini on Il Macello di Bolgheri and Il Macello Panini, emphasizing Tuscan meat traditions with premium Chianina beef and house-cured salumi from his family farm.
