The Climb
At Club Gascon in London, Pascal Aussignac built a long-running chef patron model: one restaurant, one point of view, from 1998–2026. That length matters in trade terms. It shows a kitchen identity held over time, not improvised for a season, with Gascony carried into a London dining room through repetition, calibration and control. Born in Toulouse and raised in La Rochelle, he approached the regional brief as translation rather than reproduction: the source remained Gascon, but the expression was shaped for a different city and a different audience.
Today
As co-owner of Gascon Connection, Pascal Aussignac stays with the same line of work: maintaining a Gascon reference point rather than treating it as a closed chapter. The role extends the logic of Club Gascon, where regional cooking was presented through a contemporary lens, and keeps the emphasis on continuity, not reset. For a chef whose work has always sat between origin and adaptation, the title reads as ongoing practice.
Signature
Cassoulet and Brine Duck Foie Gras, Pickled Mirabelles & Aromatic Greengage are the named signatures here, and together they show the range of Aussignac’s kitchen language. Cassoulet carries the slower, denser side of Gascon cooking. Brine Duck Foie Gras, Pickled Mirabelles & Aromatic Greengage shifts toward contrast, setting richness against pickled and fruit-led acidity. The pair points to a kitchen working with depth, brightness and controlled contrast rather than a single register.
In Their Words “I do not think that we can say that Club Gascon is providing comfort food, rather a creative take on Gascon culture.” That line sets out the operating principle plainly: not comfort food as an endpoint, but Gascony reframed for London. For Pascal Aussignac, the regional idea is not a museum piece. It is material for reinterpretation, with the emphasis on how a culture reads in a new context. The refusal of the word matters less as a gesture than as a technical position: the cooking is meant to register as Gascon, while still moving beyond direct recall.
