Paul Kahan is executive chef and partner at One Off Hospitality, the Chicago group behind Avec, The Publican and Big Star. He won the James Beard Award for Outstanding Chef in 2013 and Best Chef: Midwest in 2004, and was a Food & Wine Best New Chef in 1999.
