The Path

Agricultural rum at Husk Distillers is built from cane, not adjuncts: fresh juice moves through fermentation, distillation and maturation, and Paul Messenger has helped shape that process in North Tumbulgum, New South Wales. The result is a farm-to-bottle agricole rum with an Australian register, grounded in the Tweed Valley rather than borrowed from elsewhere. The work is patient by design; each stage is there to carry place into the finished spirit. Messenger’s earlier work in the exploration and mining industry in the Western Australia goldfields sits at a distance from distilling, but it gives context to the scale and discipline he brought to Husk Distillers in Tumbulgum, New South Wales, Australia. He became Executive Director there before taking on co-founder status in 2012, when the project began to read less like an idea and more like a working distillery anchored to land.

The Work Today

At Husk Distillers in North Tumbulgum, the craft is still organised around the cane. Under Paul Messenger, the distillery’s identity comes from what the farm yields: cane arrives, juice is processed, and the spirit is built from that agricultural start. The interest lies in restraint and translation, in taking a raw local crop and turning it into something polished without losing its source. Recognition has also come through Spiced Bam Bam, which won gold at the 2018 San Francisco World Spirits Competition. For Paul Messenger and Husk Distillers, that award places a Tweed Valley spirit in a wider field without changing the terms of the work: local material, clear method, and a finished bottle that can stand outside its region.

Signature

Paul's signature wines include Ink Gin, Spiced Bam Bam, and Husk Australian Agricole Rum. Together, they sketch a portrait of the distillery’s range and its point of view, from the vivid identity of Ink Gin to the rum that carries the farm’s cane character through to the finished glass.
