The working line in Pax Mahle’s wine has moved through service, buying, cellar work, and vineyard expression: sommelier work until 1997, corporate buying from 1997, the 2000 launch of the Pax brand, then Wind Gap, Agharta, Pax Winery, and Halcon Estate. The continuity is Syrah and the practical contact points of wine: grapes, place, fermentation, and the decisions that keep a bottling tied to its source.
The Path
Restaurant wine work trains a palate in use, not abstraction. Early in their career, Pax Mahle worked as a sommelier in East Coast until 1997, reading bottles in the context of tables, service, and the demands of drinkers. In 1997, that experience shifted into selection at scale when Mahle became corporate wine buyer at Dean & DeLuca in West Coast from 1997, a role built on judgment before the bottle is opened: sourcing, placement, and recognizing character within a commercial frame. Cellar work changed the position from interpretation to making. At Wind Gap in Sebastopol, California, and at the Agharta label, Mahle worked inside the sequence that turns fruit into wine rather than only presenting the finished bottle. Across those chapters, the through-line is not a fixed style claim; it is attention to the material terms of wine: fruit, site, fermentation, texture, and time. The Pax label / Pax Wines, first launched in 2000, remains the central vehicle for that work. Today, Pax is winemaker of Pax label / Pax Wines, continuing in the space where instinct has to answer to discipline.
The Work Today
Low-intervention cellar practice depends on choices made before the fruit reaches the winery. Today, Mahle is owner and winemaker at Pax Winery and winemaker for the Pax label, Pax Wines. Fruit is sourced from organically and/or sustainably farmed vineyards, crushed by foot and hand, fermented with ambient natural yeasts, and made without unnatural additives. Whole clusters are part of the approach, keeping harvest structure present in the wine rather than treating it as something to erase. Syrah remains the center of the work because it has held Mahle’s attention over time, not because the market has made it easy. Around that core, the range includes rare and intriguing varieties such as Trousseau Gris, Pineau d'Aunis and Mondeuse Noire. The combination gives the cellar both focus and reach: one primary grape with a long thread through the work, and a set of less common varieties that still have to answer to vineyard source. The emphasis is energy, structure, and a wine allowed to stay in its own register.

Acclaim
The 2016 Sonoma Hillsides Syrah is a 100% Sonoma County Syrah inspired by St. Joseph. Blended from multiple cool-climate hillside sites, it has been described by Pax Winery as one of its finest creations, with the bottling placing Syrah’s tension and savor inside a Sonoma County frame. The Sonoma Hillsides Syrah label also carries a Rhône reference. It was inspired by an extensive tasting in Raymond Trollat’s cellar in the Rhône Valley and designed as an ode to the French winemaker, connecting a Sonoma bottling to a formative encounter with Rhône Syrah. In Mahle’s work, that reference remains practical rather than decorative: California fruit, a remembered benchmark, and the grape that continues to organize the cellar.
