i. Biography
Philippe Gauvreau built his French cuisine practice through pastry, brigade work, and long station time in kitchens where repetition and control matter. He led Daddy Poule in Tassin-la-Demi-Lune from 2017 to 2025, and later worked as chef consultant of Café Chic at Le Méridien Dubai, carrying a way of cooking formed over decades rather than trends.
The Path
In pastry, the first demands are precision and timing, and Philippe Gauvreau started there as a pastry shop worker / trainee at Uncle Francis's pastry shop in Rambouillet, France. That early work set a technical base before he moved into the pace of full-service kitchens. His path then ran through Quai des Ormes in Paris, France, Grand Véfour in Paris, France, La Bonne Auberge in Antibes, France, and Le Négresco in Nice, France, each address adding another standard to meet and keep. At Le Négresco in Nice, France, he became second to chef Jacques Maximin until 1993, a role that sits close to the work of discipline, timing, and exact execution. By the time he stepped into leadership, the craft was already visible in the structure of his career: restraint, consistency, and a preference for clear cooking over display. In 1993, Philippe moved into the role of chef at La Rotonde / Pavillon de La Rotonde in La Tour de Salvagny / Charbonnières-les-Bains, France, where he remained until 2012. That long run speaks to a kitchen identity built over time, not reset each season. In 2012, he went on to co-found and lead Halles 9 in Tassin-la-Demi-Lune, France, then later took on Daddy Poule in Tassin-la-Demi-Lune, France from 2017–2025. The names changed, but the through-line stayed fixed: French cuisine worked with endurance, adaptation, and control.
