Independent wine consultancy is built on service before opinion: the ability to read a room, manage a cellar, taste under pressure, and make a bottle useful in context. In the case of Polish consultant Piotr Pietras, a BA in Hotel Management supplied the formal base, while the route to the Master Sommelier Diploma through the Court of Master Sommeliers in 2017 added the examination discipline of blind tasting, theory, maps, and service standard. The Path
Service training starts with timing, attention, composure, and the ability to anticipate a guest need before it becomes visible. Piotr Pietras began that work as a room service waiter at Sheraton Hotel in Poznan, Poland, where hospitality was learned in its direct form before cellars, titles, or awards entered the frame. London dining rooms then supplied the cellar pressure. As head sommelier at Launceston Place, Pietras worked in the repeated decision-making that shapes a sommelier’s craft: what to pour, when to speak, when to listen, and how to make a bottle legible at the table. As director of wine at Hide in London (from 2018), the role required precision, polish, speed, detail, warmth, and technical ease within a high-demand service setting. The Work Today
Independent consulting, in Pietras’s case, is focused on organic and biodynamic wines and reductive white wines.
