The Climb

Until 1978, teaching was the work that shaped Raymond Paccot’s discipline: observation, repetition, and the slow building of understanding. When he moved to the estate that year, the shift was not a rupture so much as a change of ground. Vineyard work asks for the same habits as the classroom, but with different proof points: watch closely, read what is in front of you, and let time do part of the labor. By 1982, he had become the estate’s owner, and the way he describes that role stays practical and exact: “Understanding and interpreting and enhancing it.” Since 1999, Raymond Paccot has served as manager and winegrower / biodynamic viticulture at Domaine la Colombe SA, and the title points to a life organized around the vineyard’s rhythms rather than around display. In that kind of work, seasons set the pace and the estate sets the terms. His practice at Domaine la Colombe SA follows the same logic as the earlier transition: close attention, measured decisions, and a preference for refinement over force.

Today

Ownership at Domaine la Colombe SA has been central since 1982, and in Raymond Paccot’s hands it reads as stewardship rather than possession. His own phrase for the role remains the clearest account of what that means: “Understanding and interpreting and enhancing it.” Those three verbs describe a working method as much as a philosophy. They place the burden on reading the estate accurately, then improving it without overriding what is already there.
