France provided the formal grounding, but the craft line runs through a sequence of kitchens that demanded control, pace, and adaptability. Robert McGrath moved from Head Chef at Four Seasons Hotel in Austin, Texas, to executive chef at Four Seasons Hotel in Houston, Texas, then into ownership as chef/owner at Sierra Grill in Houston, Texas and chef/owner at Brio Vista in Austin, Texas. That progression reflects a working vocabulary built in high-end hotel service and carried into his own rooms: disciplined execution, steady range, and food that stays legible rather than overworked. His later roles as chef at Roaring Fork in Scottsdale, Arizona (from 1997), chef at Renegade Canteen in Scottsdale, Arizona, and chef at Spotted Donkey Cantina in Phoenix/Scottsdale area, Arizona, show the same pattern—different formats, same emphasis on direct, grounded cooking. Today, Robert is chef of Market Street Kitchen @ DC Ranch.
