The Climb
Precision kitchens are where Sam Bowser’s method was formed: rooms where standards are set before service starts and then held through the pass. The early years were spent as chef at Le Manoir aux Quat’Saisons in Oxfordshire and as chef at The Square in London, two kitchens that carry a reputation for exacting execution and long, disciplined services. From there, the work shifted into head chef roles at Dormy House Hotel in The Cotswolds and Whatley Manor Hotel in The Cotswolds, where the job broadens from cooking to holding a brigade together and keeping the pace stable across every service. That progression carried into Llangoed Hall Hotel in Powys (2019–2021), where the head chef role sharpened the same requirements: control, consistency, and clean leadership under pressure. By then, Bowser’s path had moved through restaurant and hotel kitchens with each step adding a different layer of experience — the technical demands of acclaimed dining, the operational weight of hotel service, and the discipline needed to direct a team day after day. From 2021, Bowser took on the role of executive chef at The Wild Rabbit in Kingham, Oxfordshire (from 2021), while also serving as executive chef at Daylesford Organic. The move brought him back to the Cotswolds and closer to the produce that shapes the region’s working rhythm. In his own words, it was not just a change of kitchen, but a return with feeling.
Today
The executive-chef role at The Wild Rabbit in Kingham, Oxfordshire, which Bowser took over in 2021, is defined by proximity to the land and to Daylesford Organic’s produce. That setting gives the kitchen a direct line between ingredient and service. For a chef whose background runs from acclaimed restaurants to hotel brigades, the value of that arrangement is practical: the produce is not a concept on the page, but part of the daily working conversation. At The Wild Rabbit, his work as executive chef sits alongside that established relationship, bringing together the experience gathered at Le Manoir aux Quat’Saisons, The Square, Dormy House Hotel, Whatley Manor Hotel, and Llangoed Hall Hotel (2019–2021) with a kitchen shaped by produce-led priorities. Read this way, Bowser’s current post looks less like a break with the past than a continuation of it. The rooms have changed and the titles have shifted, but the through-line remains clear: kitchens where seasonality matters, where ingredients are handled with care, and where leadership shows itself in restraint and attention.
In Their Words “I have been lucky enough to work in many high-end and acclaimed kitchens, but it was working with the Bamford family where I really developed an in-depth understanding of seasonality.”
Recognition
After chef roles at Le Manoir aux Quat’Saisons and The Square, Bowser moved through head-chef posts at Dormy House Hotel and Llangoed Hall Hotel before taking the executive-chef role at The Wild Rabbit in 2021. That sequence points to the kind of trust built in kitchens where standards are high and details matter. Repeatedly, he has been placed in rooms that ask for exactness, composure, and leadership under pressure. His years at Llangoed Hall Hotel (2019–2021) marked the end of one phase of that development; his work from 2021 at The Wild Rabbit and Daylesford Organic places him in a setting where those habits can be expressed through seasonality and produce with directness. The result is a profile shaped by steady ascent, tighter focus, and a clear sense of place.
