The Climb
The early training runs through Cornell University and the University of New Hampshire before the line moves into service at Shoals Marine Laboratory dining hall in Appledore Island, Maine (1974–1976). That sequence matters: study first, then the daily discipline of feeding people in a place where land, sea, and season sit close to the table. In Sam Hayward’s case, those years set a working frame built around clarity, restraint, and a kitchen tempo that stays near the heat.
Today
Since 1996, cofounder and chef at Fore Street in Portland, Maine has meant a kitchen with a fixed point of view rather than an open-ended program. Sam Hayward has held that role since the restaurant opened, and the menu was conceived with specific dishes already in mind. Hanger steak was one of the planned signature items from the start. The result is a body of work that values plainspoken cooking, direct fire, and ingredients handled with confidence.
Signature
Hanger steak sits among Sam Hayward’s signature dishes. It fits a kitchen language that favors texture, char, and the clean force of ingredients used without excess.
Recognition
James Beard Award, Best Chef, Northeast is among Sam Hayward’s honors. The award aligns with a career defined less by reinvention than by consistency, with Fore Street serving as the clearest record of that approach.
