Sarah Grueneberg worked as sous chef at Brennan's of Houston (2003–2005), a role grounded in timing, station fluency, and the ability to keep standards intact under pressure. The Italian fine-dining range came next at Spiaggia, where she entered as purchasing sous chef at Spiaggia (2007–2008), then became Chef di Cucina at Spiaggia (2008–2010), before becoming executive chef at Spiaggia (from 2010). That progression shows the trade work behind a point of view: sourcing, organizing, leading, refining, and carrying a kitchen’s language through a serious dining room. At Spiaggia, the language was Italian fine dining, and the demands required control as much as creativity. Grueneberg’s years there gave the later restaurant a clear foundation in Italian technique and dining-room expectation. Competition television added another kind of pressure: compressed time, public judgment, and work produced under constraints. Grueneberg appeared as contestant at Top Chef, season 9, contestant at Beat Bobby Flay (2013), and contestant at Iron Chef Gauntlet, season 1 (2017). Today, she is head chef and owner of Monteverde Restaurant & Pastificio (since 2016), where that pressure has been redirected into a daily pasta program and a restaurant built around repeatable craft.

The restaurant’s name states the production model. Grueneberg has explained, "In Italian it means 'the place where pasta is made,' and so we wanted to have that be the heart of the restaurant." At Monteverde Restaurant & Pastificio, the pastificio is literal infrastructure. Hand-made fresh pastas are produced throughout the day in many shapes, sizes, and textures, with the bar area functioning as an open workshop. Shape changes bite. Texture changes how sauce is carried. The craft is in the small decisions that determine whether a pasta eats with grip, give, or weight. Cacio whey pepe is a riff on Roman cacio e pepe, made with corkscrew-shaped fusilloni, pecorino, and lemon ricotta whey, using the familiar frame of cheese and pepper with a bright dairy edge. Redfish a la plancha with Calabrian chile crunch connects to her Texas upbringing through heat, char, and coastal richness alongside Italian ingredients. Lillian’s Stuffed Cabbage brings savoy cabbage together with porcini Bolognese, Parmigiano-Reggiano, and aged balsamic vinegar, carrying family reference through a composed Italian-rooted build.
