That early certainty still sits under Scott Paton’s work at Àclèaf. The cooking is built around a clear brief: make people smile, and do it through food that is considered, shaped, and put over the pass with attention to both the guest and the ingredient. The result is a style that reads as direct rather than decorative, with restraint doing the heavy lifting.
The Climb
Kitchen work came first, and the progression is visible in the roles Scott Paton held along the way. He started at The Jack in the Green as Kitchen Porter, then moved into the kitchen as chef, taking the long view of service from the bottom up. That base fed into his years as Head Chef at The Horn of Plenty (2011–2016), where the job shifted from execution to leadership. In 2016, he became Head Chef at The Gallery Restaurant at Boringdon Hall, extending a career marked by steady advancement rather than sudden leaps. Today, Scott is Head Chef of Àclèaf.

At Àclèaf, Scott Paton works from a plain-spoken rule he has described as “Sympathetic.” The point is not sentiment; it is control. Source the best ingredients available, then handle them in a way that gets the most from what they already are. That approach keeps the kitchen centred on the ingredient’s own character, with flavour and texture allowed to carry the plate without excess interference.
