The Climb
Classical kitchen training is built through repetition, correction, and the steady conversion of technique into habit. At Aqua, Sean Hergatt worked in that register: disciplined, exacting, and precise. The imprint of that training remains legible in cooking that values structure, polish, and control, with refinement carried by restraint rather than excess. A chef’s palate can move into adjacent crafts when the work still depends on aroma, balance, and sequencing. As collaborator on custom tea blend Timeless at TEALEAVES (2021–2021), Hergatt applied that same controlled sensibility outside the hot kitchen, in a format shaped by steeping, layering, and delicacy rather than heat, knife work, or plating. The current role is direct: Sean is chef of Vestry.
The Work Today
New American cuisine gives a kitchen range, but it also requires discipline if the work is to hold shape. At Vestry, the New York City restaurant at The Dominick, Sean Hergatt works within that broad category through precision, classical control, modern expression, and close attention to flavor. Plate composition is part of the craft language at Vestry. Color, shape, and negative space are treated as structural tools, not surface decoration. In Hergatt’s work, presentation supports the eating sequence by directing attention and making each element read clearly before the plate reaches the table. Observation supplies part of the working method. “Many of the dishes reflect my observations of nature, whether that’s something I’ve noticed walking my dog around Central Park or out in the fields with my farmer in Ohio.” The point is practical: the kitchen draws from what is seen closely, whether in an urban park or in the field, and converts those observations into composed dishes. Memory also functions as source material when it can be disciplined into technique. “Even a childhood memory of planting seeds or picking cherries with my grandmother can be the inspiration I use.” In Hergatt’s cooking, those references sit inside a controlled system of seasonality, touch, and visual order rather than outside it as sentiment. A Michelin-starred restaurant adds public measure to the daily work.
