Commercial academy (secondary school) gave Sepp Mantler the classroom base before the work moved into cellar and vineyard. Practical training at Domaine Parent in Burgundy and practical training at Delheim Wines in South Africa then added two distinct working environments, bringing European and South African winemaking into the same formative frame. The result is a background built on both discipline and repetition in the trade, with an early emphasis on reading site, place, and process rather than chasing style for its own sake. Today, Sepp is winemaker of Mantlerhof.

Where They Are Now

At Weingut Mantlerhof in Austria, the work centers on grape character, origin, and site expression. That approach keeps the vineyard visible in the finished wine and resists excess that would blur the source. At Weingut Mantlerhof, Sepp Mantler’s role is to draw out what the parcel already gives, so each wine carries its own terrain rather than a generalized house mark. The style that follows is measured and precise. It puts fruit and place in direct conversation and leaves room for the winemaker’s hand to stay quiet.

These are bottles that point back to vineyard and variety first. The repeated use of reserve and parcel designations makes the point plainly: difference is part of the brief, and specificity carries the work.

In Their Words “The character of every wine should reflect the grape and the particular features of its origin, at best the single vineyard.” “Any intervention in the cellar has to be as close as possible to the grape.” Those lines state the method directly.
