His work joins cellar responsibility with vineyard management. The frame he gives it is family, land, and inheritance: Sergio Ávila says he has been tied to agriculture and especially viticulture for as long as he can remember, as the son and grandson of winegrowers. That lineage matters here because it explains the terms of the work: the vine first, the title later.
The Climb
Today, Sergio Ávila is Director Técnico, gerente y enólogo of Bodegas Cruz de Alba SL (grupo Ramón Bilbao / Zamora Company). The role folds together cellar oversight, estate management, and the discipline of turning a season in the vineyard into a finished bottle. It is a position built on accumulation rather than theatrics: responsibility layered over time, harvest after harvest, with the estate always setting the pace.
Today
For Ávila, farming and winemaking are inseparable. Since 2006 we have cultivated organically and since 2008 biodynamically. Those dates mark a method of work that treats the vineyard as a living system, shaped by timing, weather, and the conditions that govern each cycle. He describes that approach as working with the knowledge and interpretation of the vital dynamics of nature and crops, with the different forces that the earth (gravity) and the stars (lightness) offer us. The language is expansive, but the work itself is concrete: observation, labor, and patience applied among the rows. The pressure, as Ávila puts it, sits at the point where farming becomes a drink in someone else’s hand. What really puts pressure on us is that what people are going to drink is made with all the care, all the effort, and all the respect. That line names the standard plainly. The task is not only to make wine, but to account for the work embedded in it.

Sergio's signature wines include Finca Los Hoyales and Fuentelún. They are the clearest read on his method: vineyard attention first, cellar discipline second, and character built gradually rather than forced.

Recognition
Tim Atkin named Ávila Viticulturist of the Year. His credentials also include Demeter certification, which sits in line with the cultivation-focused philosophy he describes: continuity in the vineyard, and respect for the living landscape that anchors the work.
