Penleigh and Essendon Grammar School was the starting point before the professional kitchen took over. As an apprentice at Grand Hyatt Melbourne, Victoria, Australia, Shannon Bennett spent three years learning pace, hierarchy, and the standards expected in a serious brigade. That early discipline was followed by successive roles as chef at John Burton Race, chef at Marco Pierre White, and chef at Alain Ducasse at Hotel de Paris, each post adding pressure, precision, and another step in his formation. Those appointments point to a career shaped through exacting kitchens rather than slow drift. The progression led to Bennett’s appointment as Executive Chef at Vue de Monde in Melbourne, Victoria, Australia, where the training could be put to use in a style that joined French foundations to a clearer sense of Australian place. Since 2003, Bennett has been founder / Head Chef of Vue de Monde, while also serving as Creative Director of Vue de Monde and Vue Groups and owner and operator of Vue Events at Rialto, The Lui Bar, Bistro Vue, Benny Burger, and Café Vue. That range places him beyond a single pass in service: the work now includes leadership, concept direction, and the management of multiple venues, with cooking still at the centre.

Where They Are Now

The focus has widened into restauranteuring, but the cooking has not stopped. In Bennett’s case, the larger business of hospitality sits alongside the same kitchen discipline that defined the early years. “I don't want anything I do to ever sit still,” he has said, which suits a career built on movement, adjustment, and refinement rather than repetition.
