i. Biography
In Bangkok, Boundless Cuisine gives Resonance its operating brief: Japanese-Asian produce, French-Japanese technique, and bold Thai flavors treated as one contemporary tasting-menu language, not as shortcut fusion. In the role of Head Chef & Co-Owner, Shunsuke Shimomura uses the format to put West and Asia in contact while keeping texture, tension, and identity readable on the plate.
Formation
Kitchen discipline begins with repeatable control: knife work, heat, timing, and the restraint required to make a simple plate hold. Culinary school gave Shunsuke Shimomura that first formal structure. An intern role at Multiple Michelin-starred restaurants then moved the work into service conditions, where precision is tested by pace, expectation, and repetition. European structure entered the practice through a position in Italy and a position in France, followed by a shift in perspective at Amaru in Melbourne. The usable material from those rooms was practical rather than decorative: produce, composition, and the question of how flavor can cross cultures without being flattened. The Bangkok kitchen at Resonance now uses those references as working tools. In the co-owner/chef role, Shunsuke Shimomura treats the international résumé as a map for choosing technique, building flavor, and shaping a meal as more than a sequence of courses.
The Work Today
Boundless Cuisine at Resonance is built around crossing geographic, cultural, and culinary borders without erasing them. In the hands of Head Chef & Co-Owner Shunsuke Shimomura, the idea is tested through a changing menu: contemporary dishes that allow more than one culinary memory to occupy the same plate. The seasonal tasting menu converts work across continents into taste, aroma, temperature, and texture. Western and Asian references are not placed side by side as markers; they are worked through the gastronomic cultures of multiple continents, with connection as the aim and simplification as the hazard. The technical register is French-Japanese, with Japanese-Asian produce and flavors shaped by global experience. Japanese culinary precision, European haute cuisine artistry, and bold Thai flavors create the working tension at Resonance: structure against brightness, control against heat, familiarity against surprise. The contemporary form depends on technique making the dish clearer, not heavier. Emotional effect is part of the brief, but it is pursued through construction rather than sentiment. Shunsuke Shimomura wants dishes to evoke emotions, spark curiosity, invite contemplation, and leave a lasting impression; at Resonance, that aim is handled through the distance between countries, traditions, and stages of a working life, made coherent on the plate.
