    i. Biography

    Coming Up

Service discipline and technique carried Sim Sze Wei from finance into the bar trade. After ten years as an employee at International Bank until 2016, he worked after-hours in cocktail bars before taking an apprentice role at Ah Sam Cold Drink Stall in Singapore. That move set the pattern for the rest of his career: learning the bar through repetition, control, and front-of-house work. At ATLAS in Singapore, progression from bartender to Senior Bartender and then Assistant Head Bartender until 2025 came through service standards rather than a change of scene. Sim Sze Wei’s path through the room reflects a trade built on consistency, pace, and attention to detail.
