Skye Gyngell started in publishing, not service, as food editor at Vogue until 2003. That background shows in the way her cooking has moved: with an editor’s eye for detail, an insistence on discipline, and a clear sense of what food is meant to deliver at the table. When she entered professional kitchens, she moved through Dodin-Bouffant restaurant, French House in Soho, London, and Dorchester, building the working base that would later define her name in the trade. The central early chapter in that work came at Petersham Nurseries Café in London, where Skye Gyngell was head chef from 2004–2012.
